Manny’s Whole Wheat Banana Pancakes

Over the years, Manny has consistently won our studio pancake breakfast challenge. Here’s one of the recipes that has won our hearts and bellies.  Its wholesome, features whole grains and fresh fruit and even yogurt! We guarantee you won’t be disappointed. Bonus: if you have kids – these pancakes reheat beautifully from frozen with the use of a toaster, making them easy to serve any day of the week, especially if you have kids.

Cook Time: 30 mins
Yields: 1 dozen

Ingredients

  • ½ cup all purpose flour
  • ½ cup whole wheat flour
  • 3 tbsp fine corn flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 extra large egg
  • 6 tbs unsalted butter (plus butter to grease pan)
  • 1 ¼ cups whole milk
  • ½ cup greek yogurt
  • 1-2 ripe bananas (can be substituted with your favorite ripe berries)

Method

  1. Melt butter and set aside (allow to cool).
  2. Place all the dry ingredients into a large mixing bowl and mix well.
  3. Add egg, milk and yogurt to the dry ingredients and whisk together.
  4. Add melted butter, mix in thoroughly until batter is smooth. (If batter feels thick, add a little more milk. If its to runny, mix in a little more flour.)
  5. Heat griddle or pan for a couple of minutes on medium to high heat.
  6. Slice bananas.
  7. Melt butter onto pan / griddle surface, covering it entirely and then ladle pancake batter to desired size and quickly place banana slices on top of pancakes.
  8. Let pancakes cook until uncooked surface of pancakes has lots of bubbles and you can see that the bottom edge is browning.
  9. Flip pancakes, let cook for 1 to 2 minutes. Remove and serve.
