Lemon Rice

Who doesn’t love rice? Pete’s grandfather ( Peter as well but we called him Nono) made this simple rice dish all the time.
Rice alone is always a great side dish, its easily prepared but we find its often nice to add a little extra flavor. Here is one or our simple tips for making rice a little more “special”

My Recipe

Prep Time: 5 mins
Cook Time: 20 mins
Serves: 4

Ingredients

  • Rice
  • The Peel of One Lemon
  • Water or Chicken Stock

Step by Step

  1. Follow quantities as recommended on the package of the brand and type of rice you use. We like Basmati
  2. Heat liquid (can be water or a nice stock) to a boil, add just the peel of 1 lemon
  3. Stir in rice, lower heat to barely a simmer, cover for 10 minutes stirring occasionally. Turn off heat, let rest covered till rice is cooked, stirring occasionally about ten more minutes.
  4. Salt & Pepper to taste
  5. The lemon peel looks nice in your presentation but don't eat it!
