Shrimp Pil Pil

A number of years ago, Peter went on a trip through Spain with his daughter and they both fell in the love with the country, its people and of course the regional food.  Pil Pil, they were told, is an onomatopoeia for the bubbling sound Spaniards say the shrimp make when they’re served in a casserole of bubbling oil.  This simple dish can be found throughout southern Spain and can now be easily enjoyed by you – its certainly being enjoyed by us!

Shrimp Pil-Pil

Shrimp Pil Pil Recipe

Prep Time: 15 mins
Cook Time: 45 mins
Serves: 2 people

Ingredients

  • 1 lb medium shrimp (shelled and deveined )
  • olive oil
  • 8 cloves garlic (peeled)
  • 1 tsp hot chili flakes
  • 1 lemon

Method

  1. In a oven proof baking dish, place shrimp in bottom up to two layers thick.
  2. Add peeled, crushed garlic cloves, sprinkle with chili flakes, the zest of 1 lemon, salt & pepper.
  3. Add enough oil to completely cover shrimp.
  4. Bake uncovered in 350° oven, till oil bubbles. Should be about 45min.
  5. Serve with hot, crispy bread.
  6. Don’t forget to dip bread in the oil…YUM!
The Shrimp can also be substituted with Cod or Halibut filet! We like this with Lemon Rice as a side dish (another easy peasy recipe to try out)
